RECIPES FOR THE HOLIDAYS: These are, again, from my personal files, are long used and enjoyed. Great for the holidaysor any other time.

DON'S DANGEROUS PUNCH

Be forewarned...this punch is really easy on the palate and has a terrific wallop. Drink safely during the holidays...or anytime.

In a large bowl (6 to 8 quarts) combine the following:
1 bottle Cognac or good brandy
2 bottles Champagne
2 bottles Gingerale (32 oz.)
1 half pint bottle maraschino cherries with juice
2 large oranges, leave rinds on, sliced, seeded with rind

Serve in small cups.

This combination is at its strongest in a bowl with ice around it. Putting ice in will dilute somewhat and stretch the offering. You can also stretch it by adding additional gingerale if you wish.

REAL GUACAMOLE

3 large Haas avocados, halved, peeled and seed removed
6 green onions or scallions, chopped...include tops
2 to 3 cloves fresh garlic, mince finely
3 or 4 tablespoons fresh cilantro, chopped
3 to 4 Roma tomatoes, remove seeds, chop coarsley
Juice of one lime or equivalent lime juice
1/2 to 1 fresh Jalapeno or Serrano pepper (depending on the heat), chop finely
salt to taste

DO NOT MASH THE AVOCADO! Place the avocado halves into a large bowl, cut into large pieces.
Add tomatoes, garlic, onion, cilantro, lime juice and peppers.
Mix thoroughly, taking care to preserve the lumpy texture. Add salt to taste (Save some for the guests!)

Serve with dipping chips.

A GREAT TIP: To keep the mix from darkening put one or two of the avocado pits into the mixture, cover and refrigerate until ready to serve.
