Birds are out, some trees are starting to bud, at least here in Texas with our current temperature of 88 degrees F. I just hope this "weather season" behaves better than it did in 2005. Now, this is one recipe I just have to get out to you in a hurry: THE WORLD'S EASIEST TOMATO-BASIL SOUP This recipe could not, could not, be easier...it has only two (2) ingredients! You've just got to love it. 1. Heat two (2) 14.5 oz cans of diced tomatoes with basil, garlic and oregano. (Delmonte makes this canned item with these three ingredients already in place.) 2. Add eight (8) oz. of cream cheese, diced or cubed small. Simmer until most of the cheese has melted. Remove from heat. 3. Use a hand-held blender or mixer to purée the mixture in the pan. This makes two entrée or four appetizer portions. Now isn't that easy? It can only be made easier using my Bamix Tri-function mini-hand mixer. See it by clicking here.
