Hi, I first got started with selling on Ebay with Bourgeat's copper after I acquired a set and fell in love with it. I am still very much in love with it and have gotten very comfortable with it...sort of like having a favorite pair of old shoes or a threadbare trenchcoat. With such comfort it is easy to become almost exclusionary of other cookware and product and that really shouldn't be the case. Blinders ain't good! One misses seeing stuff. Ask any other old horse.
I hasten to inform I do offer other great cookware product, more than that, perhaps an even more affordable line that is at the very top of today's cookware lines.
Yep, it is another Bourgeat product, two lines in fact. Both are excellent. Both are perfectly suitable for home or commercial use.
One, the EXCELLENCE LINE, is more extensive in terms of pan shapes and sizes and has welded handles that are perfectly watertight.
The PERFORMANCE LINE, conversely, offers fewer sizes and shapes and has welded cast stainless steel handles.
Allow me to expand on each of the lines and, at the end, offer some suggestions for use and maintenance of any stainless steel cookware. I hope you find it useful.

USE OF ANY STAINLESS STEEL COOKWARE, THIS OR ANY OTHER BRAND.
- Avoid heating when empty or over heating while cooking.
- Avoid violent physical shocks or rapid heat changes.
- Air cool slowly before cleaning cookware.
- When cooking is completed, remember to empty your cookware, as acids and sugary foods cause damage to metal surfaces.
- Do not add salt to water until it has come to a complete boil, and stir until dissolved.
- Wash utensils as soon as possible after each use. Both lines are perfectly dishwasher safe.
- Dry cookware quickly after washing, rather than letting them dry naturally, to avoid traces of calcium.
- Use wooden or plastic utensils. (I personally reccomends any of our Exoglass utensils. They, as opposed to wood, do not soak up water or become discolored over time.)
MAINTENANCE
- To remove burnt or sticky particles, soak in hot water before cleaning with sponge.
- Do not use abrasive products.
- Do not use products which are not recommended for cleaning various metals, such as alkaline for aluminum, bleach, acid detergents, oven cleaning sprays. Any of these could etch or stain.
- In the event of calcium deposits, add a small amount of vinegar to hot water, leave to cool, then wash normally.
- Overheating traces or marks on stainless steel can be removed using specific stainless steel polishing paste products.
- Iridescent coloring (bluing) can occur after cooking foods containing starch, to remove clean using diluted vinegar.
- Store in a clean, dry place. If you must nest them do so with care or a paper towel between.
