Green Pepper, Cucumber & Radish Salad

2 cucumbers
2 green peppers, cored and cleaned of all seeds
1 bunch radishes
French dressing (or your own choice)

Peel cucumbers and slice very thin with your mandoline, soak in salted ice water for 10 to 15 minutes. Drain, dry and place on a platter.

Slice peppers and radishes very thin and lay over the cucumber slices. Cover with French dressing and allow to marinate for 15 minutes before serving.
