Cactus Salad

1 Can (7-¼ oz) natural cactus in salt water, drained
1 can (7 0z) pimiento, drained

DRESSING:
3 Tbsp salad oil
2 Tbsp tarragon vinegar
1 scallion, minced
1 clove garlic, peeled, crushed and minced finely
1/8 tsp fresh ground black pepper

Arrange a bed of cactus on small platter. Slice pimiento into julienne strips and place over the cactus. Mix the dressing ingredients and pour over salad. Marinate in the refrigerator an hour before serving.
