Chicken Hash on Pecan Waffles

CHICKEN HASH

4 Cups diced, cooked chicken
½ Cup diced celery
1 Cup chicken broth or stock
2 Cups Supreme sauce (See below)
2 Tbsp Escoffier sauce
2 egg yolks
1 Tbsp cream
1 tsp salt
¼ tsp pepper
¼ tsp paprika
½ Cup Madeira/port

Heat the diced chicken and celery in ¾ cup of the chicken broth. In a separate skillet, heat Supreme sauce and Escoffier sauce. Blend egg yolks and cream into the pan, whisking/stirring constantly and briskly. Add wine and seasonings. If the sauce is too thick, add some of the remaining broth. Blend chicken and sauce together.

SUPREME SAUCE

½ Cup butter
4 Tbsp flour
1 tsp onion juice
2 Cups broth
½ tsp salt

Melt butter, stir in the flour. Add broth, salt and onion juice, stirring constantly until sauce thickens.

PECAN WAFFLES - Depending on waffle iron... makes four waffles

2 Cups sifted flour
3 tsp baking powder
¼ tsp salt
¾ Cup chopped pecans
2 eggs, separated
1-½ Cups milk
6 Tbsp salted shortening

Sift dry ingredients together, stir in pecans. Combine beaten egg yolks, milk and shortening. Fold in stiffly beaten egg whites. Bake on greased waffle iron until done.

Serve Chicken Hash over waffles, hot of course.
