Lemon Tarts - Makes 12 tarts

2 Cups sugar
½ Cup butter
4 eggs
1 rounded Tbsp flour
Juice of 2 large lemons
1 recipe for your pastry

Cream the sugar and butter. Beat in the eggs, not separated. Add flour and then the lemon juice. Roll your pastry thin and line small tart shells filling them only half full. (The Bourgeat Gastroflex molds, either Tartlet or Mini-Tartlet, are great for this. Each has capacity of 15)

Bake in a moderate oven, 350ºF, or until the pastry browns and filling is set.
