Yellow Squash Soup - Serves 6

2 lbs crooked neck yellow squash, sliced
4 scallions sliced
2 qt chicken stock or bouillon
¼ tsp dried marjoram
1 Tbsp honey
Salt and pepper to taste

Simmer the vegetables in the stock, covered, until tender for about 30 minutes. Cool slightly, puree, return to saucepan, add honey, salt and pepper to taste. Stir well, reheat and serve.
