Palace Court Salad with Green Goddess Dressing

Salad base is shredded lettuce cut very fine... use the scissors. Make a half-inch thick mattress of the shreds to almost cover the plate. Center on this a thick slice of tomato, the a large heart of artichoke. Cover the artichoke heart with cooked crabmeat or cooked shrimp. Build up spoonful by spoonful to a peak of five (5) inches tall from the base of the artichoke. Over this dip 3 or 4 Tbsp of Green Goddess Dressing. Add 2 Tbsp sieved yolk of hard-cooked egg to trim the base of the salad.

GREEN GODDESS DRESSING - Makes about 3-½ cups

8 to 10 anchovy fillets
1 or 2 scallions, minced
3 to 4 Tbsp minced fresh parsley
1-½ Tbsp; minced tarragon leaves
3 Cups Homemade mayonnaise
3 Tbsp tarragon vinegar
3 Tbsp minces chives

Chop anchovies, then, stir in scallions, parsley and tarragon. Mix well with the mayonnaise adding enough vinegar to give the consistency of heavy cream, stir in chives.
