California - The Golden State, State flower: Golden Poppy

1. Homemade Mayonnaise
2. Palace Court Salad with Green Goddess Dressing

4. Raisin Pie

Raisin Pie

2 Cups raisins
1-½ Cups boiling water
1 cup sugar
3 Tbsp cornstarch
Few grains salt
Juice of 2 lemons
Juice of 1 orange
1-½ Tbsp grated lemon rind
1-½ Tbsp grated orange rind
Pastry for 9 inch, 2 crust pie

Cook raisins in the boiling water for 5 minutes.
Blend sugar, cornstarch and salt. Add to raisin/water mixture and cook until thick.
Remove from heat. Add lemon juice, orange juice and the grated rinds. Cool.
Pour raisin mixture into 9 inch pastry lined pie pan. Adjust top crust and bake in hot oven at 450º for 35 to 45 minutes or until done. Watch the crust!
