Cream of Pascal Celery Soup

1-½ Cup diced Pascal celery
1-½ Cup boiling water
3 Tbsp butter or margarine
1 Tbsp minced onion
3 Tbsp flour
2-½ Cups milk, scalded
2 tsp salt
¼ tsp pepper

Combine celery and water; simmer in a covered saucepan until celery is tender. Melt butter and brown onion. Add flour and stir until smooth, add milk slowly while constantly stirring. Cook in the top of a Bain Marie or double boiler until smooth and thick. Add celery along with its cooking water and season with salt and pepper to taste. Serve hot with crackers or toast.
