Pinto Bean - Avocado Salad - Serves 8

3 Cups cooked pinto beans
1 avocado, diced
1 carrot, diced
1 small onion, minced
1 small red bell pepper, diced
1 small green bell pepper, diced
½ Cup chopped endive
½ Cup mayonnaise
½ Cup French dressing

Combine beans, avocado, carrot, onion, red and green bell peppers and endive in large bowl. Add mayonnaise and French dressing, mix well. Note: Celery may be substituted for endive. For more color...use a yellow bell pepper too!
