Connecticut - The Constitution State, State flower: Mountain Laurel Yellow Squash Soup - Serves 6 to 82 lbs yellow squash, washed, trimmed and sliced. Place squash, scallions, water and honey in a large saucepan or pot and simmer gently for about 40 minutes or until the squash is tender. Stir in the dill. Put the squash through a food mill or puree in a blender until smooth. Return mixture to saucepan, season with the salt and pepper, simmer for 5 or 10 minutes. Serve hot or chill and serve cold. If you serve it cold you may have to thin it a bit with water. |
