Delaware - The First State, State flower: Peach Blossom Oatmeal Bread¼ cup molasses In a large bowl mix the molasses, butter, salt, sugar and boiling water. When the butter has melted completely, add the rolled oats and mix well. When the mixture has cooled to lukewarm, add the cake of yeast dissolved in the ½ cup lukewarm water. Add the sifted flour. Beat the dough until it is smooth and let it warm in a warm place, covered, until it doubles in size. Punch it down and knead it well on a lightly floured board or Roul'pat and let it rise in a greased bowl until it doubles in bulk again. Punch down and knead the dough a second time, shape it into 2 loaves and put them into greased bread pans. Let them rise a third time for 1 hour and bake them in a preheated 400° oven for 40 to 50 minutes. Cool the loaves on a wire rack. |
