Braised Endives - Serves 6

2 lbs Belgian endives
¼ cup butter

Wash the endives, and trim the bottoms. Parboil them in water to cover for 5 minutes. /drain and place side by side in a flat pan or baking dish. Add butter, salt and pepper and water to cover. Simmer for about 40 minutes or until tender. Remove and cover to keep hot. Reduce juices and serve over the endive.
