Georgia - The Peach State, State flower: Cherokee rose Grits Souffle - Serves 4 to 61 cup milk Put milk in 3 to 4 quart sauce pan, bring to a simmer. Gradually add meal or grits, stirring constantly, until thickened. Add butter and salt and mix well. Stir in egg yolks and set aside. Whisk egg whites until they reach soft peak stage. Stir a good spoon full of the egg whites into the corn mixture to soften it slightly, then, fold in remaining egg whites. Pour the soufflé mixture into a buttered 2 quart soufflé dish and bake in a preheated 400º oven for 25 minutes. Serve with melted butter or sauce. |
