Georgia - The Peach State, State flower: Cherokee rose Popovers1 cup flour Preheat oven to 450º. Pour ¼ tsp salad oil into each cup of popover pan or either a Gastroflex or Flexipan muffin or briochette mold. Place pan into oven and preheat until sizzlin' hot. In medium bowl, sift together flour and salt. Add milk and eggs and beat with a rotary beater or mixer until smooth, about two minutes. (Batter will look like heavy cream.) Pour batter into hot pans, filling about ½ full. Bake in the 450º oven for 15 minutes.. Reduce heat to 375º and continue baking for an additional 20 to 25 minutes. TIPS FOR SUCCESS: Have milk and eggs at room temperature for best results. Let popover batter rest about 5 - 10 minutes before pouring into pan for baking. Keep oven door closed while popovers are baking. If popovers are removed from the pan shortly after baking, the pan need not be washed...just wipe clean with a paper towel. Popovers may be reheated. Place on a baking sheet and bake in 350º oven for about 5 minutes. |
