Braised Lettuce and Watercress - Serves 4

1 head of iceberg lettuce, quartered
2 bunches watercress, cleaned, stems removed and separated into 4 bundles
8 spring onions
Chicken stock
Salt and pepper

Wash greens thoroughly and parboil 5 minutes in boiling salted water. Drain well. Lay greens in flat pan with spring onions. Salt and pepper, barely cover with chicken stock. Cover and cook slowly for 15 to 20 minutes.
