Hawaii - State flower: The Hibiscus Hawaiian Fish Chowder - Serves 8¼ lb salt pork Cut fish into 4/3" cubes. Cut salt pork into pieces ¼" thick and fry until it is crisp and brown. Remove pork and add the fish, potatoes and onions to the fat. Add salt and water; simmer for 5 minutes. Season the dish with additional salt and pepper as needed. Serve the salt pork as a garnish. |
