Hawaii - State flower: The Hibiscus Mango Schiffon Pie - Serves 5 to 62/3 cup sweetened green mango sauce* Press the mango sauce through a sieve. Beat egg yolks slightly; add mango sauce and ¼ cup sugar. Cook mixture over hot water (use double boiler or Bain Marie) until it thickens. Add the softened gelatin. Stir until the gelatin is dissolved, remove from fire, add lemon juice and cool. Add salt to the egg white and whisk until stiff and beat in ½ cup sugar. When the gelatin mixture begins to thicken, fold in the egg whites and pour into pie shell. Place the pie in refrigerator to chill. Before serving, spread the top of pie with the sweetened whipped cream. *MANGO SAUCE6 cups green or half-ripe mango slices Wash, peel and slice mangoes. Cook them in water until soft, add sugar and cook for 5 minutes longer. Yield: 1 quart. |
