Dried Beef and Potato Chowder - Serves 6

1 small jar dried beef
1 small piece of salt pork, cubes small
1 large onion, chopped
1 small tin evaporated milk
3 Idaho potatoes, peeled and sliced
2 quarts (less 1 cup) water
Pepper to taste

Fry out the salt pork, remove when crisp and reserve.
Add onions to fat and sauté until translucent.
Add the potatoes and cook gently until the start to brown.
Add the water and cook covered until the potatoes are almost done, about 10 minutes.
Add the beef and milk and cook, stirring until well blended, about 10 minutes.
Correct seasoning and serve with a sprinkling of the salt pork bits in each bowl.
