Corn Oysters - Serves 4 to 6

2 cups raw corn, freshly grated from the cob
2 eggs, well beaten
½ cup fine cracker crumbs mixed with ¼ tsp baking powder
Salt & pepper to taste

Mix the corn with the two eggs; add cracker crumb mixture, salt and pepper.

Drop the batter by small spoonfuls onto a hot, well buttered griddle and fry them quickly, turning once, until they are golden brown on both sides. Serve hot.
