Cottage Cheese Apple Pie - Serves 6

1 9 inch unbaked pie shell
2 eggs
½ cup cottage cheese
¾ cup sugar
½ cup heavy cream
1/8 tsp salt
1 tsp grated lemon rind
1-½ cups finely chopped apples
½ tsp cinnamon
1//2 tsp nutmeg

Prepare pie shell and set aside. Beat eggs slightly, add cheese, ½ cup of the water, cream, salt and lemon rind; mix well.

Blend remaining ¼ cup sugar with cinnamon and nutmeg and sprinkle over apples. Pour cheese mixture on top.

Bake in preheated oven at 425º for ten minutes. Reduce heat to 350º and bake 30 minutes longer.
