Indiana - The Hoosier State, State flower: The Peony Round Steak with Onions2 lbs round steak, about 1-½" thick Wipe beef with a damp cloth, season with salt and pepper and dredge with flour. Heat the beef fat in a heavy fry pan, 11 to 12" diameter, add the onions and when they have fried lightly push them to one side of the skillet and lay in the steak. Fry to a deep brown on both sides; cover and continue to cook until the onions are a good brown. Pour in the boiling water, cover closely and simmer for 2 hours or until the steak is very tender. Place the meat on a hot platter, pile on the onions, pour the pan gravy over the steak and arrange the lemon slices on top of the onions. Serve immediately. |
