Kentucky - The Bluegrass State, State flower: Goldenrod Bechamel SauceSauté 1 Tbsp minced onion in 3 Tbsp butter until translucent. Add ¼ cup flour, mix it well and cook the roux over low heat, stirring, for 3 minutes Remove pan from heat and pour in 2 cups scalded milk, whisking vigorously until the mixture is thick and smooth. As ¼ tsp salt and white pepper to taste and simmer the sauce for 10 minutes. Strain the sauce through a fine sieve and cover it with a buttered round of waxed paper. This makes two cups of sauce. |
