Bourbon Pecan Pie - Serves 8

1/3 cup butter
½ cup dark brown sugar
3 eggs
¼ tsp salt
1 cup dark corn syrup
1 Tbsp Kentucky bourbon
1 cup pecans, chopped
1 Tbsp flour
1 pie shell

GARNISH:

16 to 20 pecan halves, whole

OPTIONAL:

½ cup whipping cream
2 .Tbsp sugar
2 to 3 Tbsp Kentucky bourbon

Cream butter and add brown sugar slowly, beating constantly until all is absorbed and mixture is fluffy. Add eggs, one by one, beating continuously, the add salt, corn syrup and bourbon. Toss chopped pecans in flour then fold them into filling.

Pre-bake the crust according to package directions. Prick bottom of crust with fork. Pour in filling. Reset heat to 350º and bake pie for 35 minutes or until pie is firm. Decorate top by making border of pecan halves and bake 5 minutes more. Serve tepid; pie may be garnished with whipped cream flavored with sugar and bourbon.
