Bibb Lettuce with Maple Salad Dressing - Serves 6

Bibb lettuce was originated in Kentucky around 1850 by a man named Jack Bibb. One story has it that this vegetable was the foundation on which the family fortunes were rebuilt after the Civil War.

1 or 3 heads of Bibb lettuce, depending on size
2 strips bacon, minced
4 small scallions, minced
½ cup white vinegar, wine or distilled
2 Tbsp maple syrup

Separate, wash and dry lettuce leaves, toss in the salad bowl with the scallions.

Fry out the bacon. Take off the heat and remove the cooked bacon bits. Stir in the vinegar and syrup, pour over the lettuce, toss the salad, taste for seasoning and serve at once. Serve bacon bits over the top of the salad.
