Kentucky - The Bluegrass State, State flower: Goldenrod Lacy Corn Cakes1 cup water-ground white cornmeal In a bowl combine the meal, baking soda and salt. Stir in the buttermilk and egg, beat the mixture until smooth. Heat a large heavy skillet until very hot and in it melt the ¼ cup lard or shortening. Drop the batter by tablespoons into the hot fat and cook the cakes, in batches, adding more lard if necessary, for two minutes on each side or until golden. Transfer cakes with slotted spatula to paper towels to drain and keep them warm until all are cooked. Serve the cakes with ham croquettes or with butter and syrup. |
