Green Salad with Rmoulade Sauce - Serves 4

1 cup bite-size pieces lettuce
1 cup bite-size pieces romaine or escarole
½ cu bite size pieces watercress
1 cup diced celery
½ cup chopped green onions including stems
8 Blue Crab Fingers

DRESSING:

1 cup mayonnaise
½ hard boiled egg, chopped
2 Tbsp capers, l drained and chopped
1 Tbsp fresh parsley, tarragon and chervil, mixed
2 Tbsp Creole French mustard
Mix all together and chill for one hour.

Place salad greens in a large bowl and toss lightly. Add rémoulade sauce and toss again. Decorate each serving with 2 crab fingers.
