Sweet Potato - Pecan Pie - Serves 6 to 8

2 pounds sweet potatoes
1-½ cup hot milk
1 cup brown sugar
1 Tbsp butter or margarine
1 tsp ginger
1 tsp cinnamon
1 tsp nutmeg
1 tsp salt
3 eggs
Unbaked 9-inch pie shell
½ cup finely chopped pecans

Put peeled, cooked sweet potatoes through a sieve to make 2 cups. Stir in hot milk, sugar, butter and seasonings. Add gradually to beaten eggs. Pour into unbaked pie shell with a standing rim. Sprinkle with pecans. Bake in a pre-heated hot oven at 425º or a bit more for about 35 minutes or until the filling is set.
