Maine - The Pine Tree State, State flower: White Pine Cone and Tassel Baked Flounder with Minced Clams - Serves 4Arrange 1-½ lbs fillets of flounder or sole in a shallow baking dish, add one finely minced onion and 1 cup dry white wine. Bake the fillets in a preheated 325º oven until they are just done or for 15 to 20 minutes. Transfer the fillets carefully to a heatproof serving dish and keep them warm. Make a sauce with 1-½ Tbsp of flour blended with 2 Tbsp of melted butter and 1 cup of the hot cooking liquid added gradually. Simmer the sauce, stirring often, until it is smooth and thickened, then, add ½ cup heavy cream and one 8 oz can of minced clams, drained. Taste the sauce for seasoning, stir it until it is hot but not boiling, and pour it over the fish fillets. Put the dish under a broiler for a few minutes until the sauce bubbles and begins to glaze. Serve while hot. |
