Maine - The Pine Tree State, State flower: White Pine Cone and Tassel Down East Blueberry Pie - Serves 6Blueberries are such traditional fare in New England that few festive meals are complete without blueberry pie such as this one from Maine. 1 qt blueberries, picked and washed and drained Reserve 1 cup blueberries Combine remaining blueberries with sugar and ¾ cup water in saucepan. Cook, stirring occasionally, until sugar is dissolved and blueberries are soft. Combine flour, salt and ¼ cup water to paste consistency and add to hot blueberries. Cook slowly, stirring, until thickened. Add hot blueberry mixture to reserved blueberries. Turn into pie shell. Chill for at least 3 hours. Serve with whipped cream or ice cream. |
