Spinach, Bacon and Mushroom Salad - Makes 2 servings

¼ lb very fresh young, or baby, spinach
8 strips bacon
4 medium fresh mushrooms
1-½ Tbsp lemon juice
4 Tbsp olive oil
Salt
Freshly ground black pepper

Wash spinach thoroughly, remove any tough stems, shake or spin dry. Fry bacon until crisp, drain on paper towels and crumble. Slice mushrooms thinly after removing tough end of stems. Tear spinach leaves, if necessary, into 3 or 4 pc each and toss with the mushrooms and bacon. Sprinkle with lemon juice, oil, salt and several turns of the pepper grinder. Toss again, taste for seasoning. Serve immediately.
