Old-Fashioned Gingerbread

2-½ cups sifted enriched flour
1 tsp salt
1 tsp ginger
2 tsp cinnamon
½ tsp nutmeg (optional)
½ tsp cloves
½ cup lard
½ cup sugar
1-½ tsp soda
1 cup unsulphured molasses
2 eggs, beaten
1 cup sour milk

Sift flour, salt, ginger, cinnamon, nutmeg and cloves together. Cream together the lard, sugar and soda until fluffy. Add molasses to the sugar mixture' then, stir ½ cup of the dry ingredients into this creamed mixture. Add eggs one at a time, beating well after each is added. Now add sour milk and rest of the dry ingredients alternately, beating after each addition. Pour the batter into a well buttered and lightly floured pan (9 x 9 x 2" or 8 x 12 x 2") and bake in a preheated 350º oven for 45 minutes or until done.
