Maryland - The Old Line State, State flower: Black Eyed Susan Fried Chicken ala Maryland2-½ lb tender young chicken, disjointed Dip pork in flour and put in sauté pan or skillet with butter. Remove pork when fried golden and add chicken which has been dipped in milk and flour. Fry until tender. Remove chicken; drain fat from pan. Pour in cream or milk and reduce to ½ cup. Add light cream sauce, boil a few minutes, strain over chicken, sprinkle with chopped chives and parsley. Serve with the crisp salt pork. |
