Michigan - The Wolverine State, State flower: Apple Blossom Fresh Peach Pudding1 quart ripe peaches Peel and slice peaches, place in bottom of a pudding dish, sprinkle on ¾ cup powdered sugar. Scald milk in top of double boiler or Bain Marie, dissolve cornstarch in a little cold milk and stir into hot milk. Let mixture cook for 5 minutes then stir in the egg yolks which have been thoroughly beaten with granulated sugar and remove at once from fire. Beat until sugar is dissolved and mixture is creamy, pour over the peaches. When cold, cover with stiffly beaten egg whites combined with the remainder of the powdered sugar. Set in oven to brown. Serve with cream. |
