Michigan - The Wolverine State, State flower: Apple Blossom Oven Broiled Chicken with Grapes - Serves 42 small broilers, halved Salt and pepper the broiler halves and rub with soy sauce. Lay them in a shallow baking dish in a single layer, skin side up. Place in preheated oven 325º. Melt the butter in a skillet or sauté pan and sauté the mushrooms which have been lightly seasoned and dusted with flour. Add the stock and wine, reduce heat, and simmer for 15 minutes. Remove from fire and keep warm. Turn the chicken after 40 minutes. Baste with own juices. Cook for another 40 minutes and repeat basting. Then, brown under broiler, takes about 3 minutes. Add grapes to the mushroom sauce, heat thoroughly, taste for seasoning and serve over the broilers. |
