1. Swedish Dried Pea Soup
2. Fruited Snow with Apricot Sauce

Fruited Snow with Apricot Sauce - 18 servings

Soak 3 Tbsp Gelatin ¾ cup water

Dissolve in 3 cups boiling water

Add:

¾ cups sugar
3.4 cups lemon juice
1 cup softened cream cheese
4-½ cups cut, drained assorted fresh fruit

Place in mold in refrigerator and chill until firm. Serve as salad with apricot sauce (see below)

APRICOT SAUCE:

1 lb dried apricots

Cover with cold water and bring to a boil, simmer for 20 minutes. Add ¼ cup sugar and ¼ cup lemon juice. Mash or whip into a sauce consistency. Serve over fruited snow.
