Bacon and Peanut Butter Muffins - Makes 12

2 cups sifted flour
1 Tbsp baking powder
2 Tbsp sugar
1 tsp salt
2 Tbsp salted bacon fat or butter
1 egg, beaten
1 cup milk
3 uncooked bacon strips, finely chopped
¼ cup peanut butter

Preheat oven to 400º. You'll need a muffin pan or mold.

Sift flour, baking powder, sugar and salt together. Blend melted fat, well-beaten egg, milk and finely chopped bacon, then, stir in flour mixture but do not beat; mixture should be just moistened.

Pour a little batter into each well-greased muffin tin or mold and drop in about 1/3 tsp peanut butter before filling molds three-fourths full. Bake for 20 to 25 minutes. Remove to rack and cool or serve hot.
