Oxtail Soup - Serves 8

1-½ lbs oxtail, cut to 2" lengths
3 Tbsp fat or cooking oil
3 qts beef consommé or stock
½ cup each: diced turnip, carrot, onion, celery
1 tsp lemon juice
1 tsp Worcestershire sauce
1 Tbsp Madeira or Sherry
Flour, salt and pepper

Dust the meat with seasoned flour and brown on all sides in the cooking fat.

Add the consommé and simmer for 2 to 3 hours until the meat is easily removed from the bones. Add the vegetables and simmer until soft. Add lemon juice, Worcestershire sauce and wint.

Correct seasoning and add boiling water if necessary. Heat and serve. This should make 1-½ quarts, enough for 8 servings.
