Vegetable Salad - Serves 6

1 med. Head cauliflower
1 can artichoke hearts
1 cup shredded carrots
½ cup sliced green onions and tops
½ cup celery, sliced diagonally
2/3 cup mayonnaise
2 Tbsp lemon juice
½ to 1 tsp dill weed
½ tsp salt

Separate cauliflower into flowerets. Drain artichoke hearts; cut into bite-size pieces. Combine cauliflower, artichoke hearts, carrots, green onions and celery. Combine mayo, lemon juice, dill weed and salt. Pour this latter over the vegetable mixture; mix well. Chill well before serving.
