Nebraska - The Cornhusker State, State flower: The Goldenrod Nebraska Carrot Cake2 cups flour Sift flour, sugar, soda, cinnamon and salt together. Add carrots; mix. Add salad oil; add eggs, one at a time, beating well after each addition. Place in a greased 9 x 13" baking pan or 2 layer pans. In a preheated oven, 325º, bake for about 50 minutes; cool on a rack. FROSTING: Have cream chees and butter at room temperature. Place both in bowl; beat with mixed until blended. Add sugar and vanilla; beat well. Stir in pecans; spread on cake. |
