North Carolina - State flower: The Dogwood

1. Sweet and Sour Bean Salad
2. Oyster Chowder

Braised Cucumbers - Serves 4

4 large or 6 small cucumbers, peeled, seeded and cut into strips
¼ cup butter
1 tsp meat glaze
Salt & pepper to taste
Fresh dill, chives or parsley, finely chopped

Blanch cucumbers in salted water, drain well and cook, covered, in butter until tender.

Add the meat glaze and salt and freshly ground black pepper. Dust them with the dill, chives or parsley. Serve warm.
