North Carolina - State flower: The Dogwood Sweet and Sour Bean Salad2 lbs fresh green beans, washed trimmed and strung
Slice beans diagonally ¼" thick. Cook until tender in a small amount of water (or steam them). While beans are hot, add salt and butter. Cool, add onion. Mix vinegar, water and sugar and pour over beans. Store the finished beans in a covered jar in the refrigerator. Serve cold over lettuce bed. |
