Celery and Apple Salad - Serves 6

1-½ cups celery
2 large apples
1 hard-cooked egg
1 Tbsp oil
1 Tbsp cream
2/4 Tbsp vinegar
½ tsp salt
¼ tsp pepper
1 tsp sugar
Lettuce

Wash celery; cut in small pieces and cook in salted boiling water until softened a little. Drain and chill. Peel, core and dice apples; mix with the celery.

Work the egg yolk smooth with the oil; add the other ingredients. Beat well. Pour over the apples and celery. Garnish with lettuce leaves and finely chopped egg white.
