North Dakota - The Flickertail State, State flower: Wild Prairie Rose Lamb and Cabbage (Fair I Kaal) - Makes 6 to 8 servings3 lbs lamb shank Wipe lamb with a clean, wet cloth. Cut into serving size pieces. Wash and drain cabbage; turn it upside down, core up, in salt water and let stand for half an hour. Rinse and cut into 6 or 8 pieces. Melt butter in a large kettle; put in the meat and cabbage in layers; the bottom or first layer should be meat, the top or last layer should be cabbage. Sprinkle each layer with mix of flour and salt and pour boiling water over all. Tie the pepper corns in a cheesecloth bag and add to the kettle. Let the kettle simmer, covered, for 3 hours. Remove the peppercorns and serve hot. |
