North Dakota - The Flickertail State, State flower: Wild Prairie Rose Lefse (Old World Potato Cakes) - Yield - about 3 dozen2-½ lb potatoes, peeled Boil potatoes in salted water, drain and mash thoroughly. Add butter while still hot and mix well. Chill in the refrigerator until cold. When ready, work in enough flour that will hold together. Knead until smooth. Break off pieces and roll into pancakes as thin as possible. Cook over medium heat until raised parts of cakes are browned. Remove and keep covered so they do not dry out while cooking more as needed. Spread with butter, top with a soft cheese and roll into a tube. Serve with jam, etc. NOTE: This recipe is as close as I have been able to come to the Lefse. Apparently the original lefse is one big one, more in the style of German pancakes as we know them. |
