North Dakota - The Flickertail State, State flower: Wild Prairie Rose Whole Wheat Bread4 cups scalded milk Cool milk to lukewarm; add sugar, salt, yeast and shortening; stir until dissolved. Then, add flour to make a stiff dough and mix well. Place dough on a floured breadboard and knead until smooth. Put dough back in bowl, cover and let rise in a warm place to double in bulk, about 1-½ hours. Put dough back on breadboard, knead quickly and thoroughly; make into loaves, place in pans and allow to rise again until almost double its bulk. It should not rise too much, however, for too light dough will cause bread to drop in oven. |
