Ohio - The Buckeye State, State flower: Scarlet Carnation Raspberry Shrub4qts. red raspberries Put berries in a colander, wash lightly with cold water; drain. Spread on a large enameled tray. (The enameled drip pan of the oven is excellent). Set in a cool oven, not more than 250º . After berries ave been in for 10 minutes, pull tray out and mash the berries lightly with a spoon. Put tray back inoven for 30 minutes. The heat should be so low that it does nothing but set the juice to running. Put fruit in a jelly bag. Squeeze out juice; measure. Measure one-quarter cups of sugar as of juice, i.e. 2 cups juice equals ½ cup sugar. Boil sugar and juice for 15 minutes. Add vinegar. Boil 10 minutes longer. Pour into hot, clean jars, capping with sterilized rubber rings and tops. Before serving, dilute juice with cold water and chipped ice, using 1/3 shrub and 2/3 water. Serve in 8 to 10 ounce glasses. SHRUB DEFINED: Colonial-day shrubs were spiked with liquor (usually brandy or rum) but today these fruit juice, sugar and vinegar drinks are usually nonalcoholic. Shrubs are served over ice, with or without soda water. |
