Oregon - The Beaver State, State flower: Grape

1. Fish and Spinach Broth
2. Cucumbers with Yogurt and Dijon Mustard
3. Salmon Steak Baked with Stuffing
4. Turnips (As you like them)
5. Buckskin Bread
6. Prune Cake with Whipped Cream

Cucumbers with Yogurt and Dijon Mustard - Serves 6

2 cucumbers, sliced very thin, unpeeled
1 small onion, sliced very thin, peeled
1 cup plain yogurt
¼ cup vinegar
2/3 tsp salt
¼ tsp pepper
3 Tbsp sugar
1 Tbsp Dijon mustard

Combine cucumbers and onions. Mix all remaining ingredients in a bowl and stir until smooth. Pour the dressing over the cucumbers and onions and toss lightly...just before serving. If dressing is added too far in advance the salad will become soggy.
